Paris-Brest:: What's that?

Foodies, food stylists and bakers likely know the answer, but I did not! While researching the reason that cream puffs don't always live up to their name, I came across this interesting recipe that covers the pitfalls of what can go wrong and how to assure creating a perfect "choux" pastry for Paris-Brest and every permeation.  Enjoy!
